Devil Prawns
Ingredients:
36 Jumbo tiger prawns
olive oil
3 cups fiery tomatoe sauce (page 219)
1 red peppers
1 green peppers
sliced mushrooms
2 teaspoons garlic chopped
1 teaspoon oregano chopped
1 teaspoon marjoram chopped
1 tablespoon butter
1/4 cup onions
fresh Italian parsley
Directions:
Prepare Firey Tomatoe sauce ahead of time.
cut peppers in strips.
Combine olive oil, peppers, mushrooms, herbs, garlic. Mix and let marinate
for 30 minutes.
Brush prawns with oil.
Saute for 6 minutes.
Add 3 spoons full of tomatoe sauce and toss prawns to even out.
Cook vegetables in heavy bottom pan (stock pot) for 6 minutes.
Add prawns to vegetables and simmer.
Prepare Basic Rice.
Serve prawns and vegetables around rice.
Use plenty of firey tomatoe sauce.
