Authentic Cuban Black Bean

INGREDIENTS


1 1lb. Black Beans
4 strips lean bacon.
1 Large Spanish or Yellow Onion
1 Green Pepper
4 Garlic Cloves
Coarse Salt
Black Pepper
Olive Oil
1 Teaspoon of Vinegar
Ground Cumin

DIRECTIONS:
 

SOAKING BEANS OVERNIGHT


Rinse beans thoroughly.
Place the beans in the 8 quart pot.
Fill the pot with water about 1 inch above the bean line, cover and soak overnight.

PREPARING THE BEANS


The next day, drain and then add 8 new cups of water to the pot.
Bring to a boil and cook them for 60 minutes, stirring frequently.
Be careful not to let the beans dry out completely.
You can add 1 cup of water if they are absorbing the water too quickly.

Check bean tenderness. If you need to add more water it must be warm.

Add some fresh cracked pepper – to taste.

MAKING THE SOFRITO


Cook bacon in fry pan. DO NOT over cook.
When bacon is cooked medium, remove from pan.
Save bacon fat.
Dice bacon.
Add diced bacon to beans. stir well.

Dice 1 onion.
Dice 1 green pepper.
Dice 2 garlic cloves.
Cook onions, and green peppers in bacon fat.
Add the garlic to bacon fat, stir, do not let it brown
Add a teaspoon of vinegar
Add 1teaspoon of cumin.
Stir well.

Add all contents to the beans that are still cooking at low temp.
Continue to cook your beans for about another 1 1/2 hours on low heat – COVERED.

The beans should be tender, the broth a bit thick.
